Then & Now: America 250 Pie Flights

As America approaches its 250th year, we’re baking from the recipes that shaped it.

The Then & Now series pairs historic American pie recipes—made before industrial shortcuts—with modern, viral interpretations of the same flavors. Each limited-edition flight is baked in our 1897 Main Street building in Mayville, Wisconsin, and released seasonally in small batches.

These pie flights are designed to be tasted side by side.

Each box includes four 5-inch pies: two historic recipes drawn from early American baking traditions, and two modern interpretations inspired by contemporary food culture. Together, they tell a story of continuity—how American baking has evolved, and how much has remained the same.

This series is released in limited quantities as part of our countdown to America’s 250th anniversary.
