Rhubarb was grown in almost everyone's yard back in the day. It's still a midwestern favorite. We're one of the only places we know that bakes a pie with just rhubarb. There's no thick jelly filling inside our homemade vegan crust. We put rhubarb, some sugar and cinnamon, and a little bit of thickener into the crust just before we bake it. Once the rhubarb goes into the oven, it releases some of its juices and thickens a bit. If you want the true taste of rhubarb, this is your pie! Vegan.
